The Whipped Burrata Platter (traditional & Thermomix)
The vegetarian summer version of a cheese board or a charcuterie platter for tomato and antipasti lovers.

Start with the dressing. In a blender chop the garlic clove and the basil leaves. Add the sugar, salt, pepper, white Balsamic and the olive oil and blend until it combines.
For the whipped Burrata, fill the cream with the salt and pepper into a high jug and start whipping it. Before it starts to stiffen add the Burrata in chunks and continue whipping until it has a soft, creamy and airy consistency. Fill it into a nice bowl that fits on your platter and reserve in the fridge.
Add a light bed of greens on your big platter and place the bowl with the whipped Burrata on it.
Slice the heirloom tomatoes up in different ways to emphasize color and interest and overlap them on the platter.
Add cherry tomatoes either sliced or unsliced.
Tuck the sliced onions in between tomato slices and wedges.
Then add the olives and artichoke hearts decoratively.
Drizzle the whole platter with the dressing and don't forget to drip some over the whipped Burrata. Strew chopped up basil leaves over it and enjoy.
Tipp: Leftovers can be finished within 2 days, the whipped Burrata will keep its fluffy texture for 2 days but it's best to serve it the same day.
