For the spätzle dough, mix the eggs, water, salt and nutmeg with a wooden spoon, then gradually add the flour.
Beat by hand with the wooden spoon until the dough is smooth. It should be firm but slightly pourable. If the dough is too runny, add a little flour.
Then scrape the spaetzle with a spaetzle plane (or spaetzle press or spaetzle scraper) in plenty of boiling water and drain after about 2-4 minutes or skim with a skimmer when they float to the surface.
If the spätzle are not to be used immediately, cool them in cold water and leave to drain. You can also freeze them.
