For the custard, place the milk and cream and vanilla in a small saucepan. Bring the mixture to the boil once and then remove from the heat to let infuse and cool down.
Bring the mixture to the boil once more and then remove from the heat.
Now whisk the egg yolks with the sugar and salt in a second saucepan until well frothy.
Pour in the warm vanilla milk and stir immediately. Slowly thicken on the lowest heat, stirring regularly. Please do not leave the cooker during this time.
When it has the desired consistency, remove from the heat and leave to cool.
