Wash and cut the strawberries into smallish pieces. Put them into a bowl and add the icing sugar and the vanilla to it. This is important as the strawberries will let go of some their juice and will soften up.
Whip the cream to soft peaks, break 6 of the Meringues up into small chunks into the cream and add 3/4 of the strawberry mixture. Now very carefully mix it under trying NOT to get a pink mush. Fill into a couple of glasses and spoon the rest of the strawberries on top adding the juices in the bowl as well. You can place a couple of small chunks on the very top for presentational purposes.
Now it is ready to be served 😋
