Préparation:
- Heat the sugar and water in a small saucepan over medium heat until golden brown.
- Immediately pour the caramel into the ramekins and swirl to coat the bottom. Let it cool.
- Heat the milk and vanilla paste in a saucepan over medium heat, but do not let it boil. Remove from heat.
- Whisk the eggs, egg yolks, and sugar in a bowl (do not whisk until frothy).
- Slowly pour the warm milk into the egg mixture, stirring constantly to prevent curdling.
- Strain the mixture through a sieve and pour it into the ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the ramekins.
- Bake in a preheated oven at 150°C (300°F) for 30–35 minutes, until the flan is slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool completely.
- Before serving, unmold the flans and drizzle with the liquid caramel.
