There are 3 ways to grill peppers: on the BBQ, over an open gas flame or in the oven (230 C - 250 C).
Grill the peppers, turning regularly, until the skin is covered with blisters and blackened in some places. However, they must not burn too much.
Remove and cover with a damp cloth or place in large freezer bags and leave to cool. This will finally remove the skin from the flesh and make it easy to peel off. Slice the peeled peppers lengthways into strips and remove the seeds and the stem.
Place the strips in a sterilized jar, add the thinly sliced garlic cloves and cover everything with olive oil. Keeps for several weeks in the fridge as long as the contents are completely covered with olive oil
