Giant Raspberry Macaron
One of the most famous French specialities โ˜บ and perfect for using up all those egg whites we always have left over!

For the macarons, put the egg whites in a bowl and start beating. Add the sugar and continue beating until it becomes stiff. Add as much pink food coloring as you need to make a nice pink meringue.

Now mix this mixture with the icing sugar and ground almonds.

Draw the 2 circles with a pencil on a baking paper and place it upside down on a baking tray. Using a piping bag, pipe 2 circles 13cm in diameter onto the baking paper.

Bake them in an oven preheated to 145 C for about 17 minutes, please check, some ovens heat more than others.
For the vanilla cream, put the whipped cream and mascarpone in a bowl with the sugar and vanilla and beat until you have a nice stiff cream.

Mix in the Greek yogurt and pour the cream into a piping bag.

Pipe the cream onto an upside down macaron circle, sticking fresh raspberries in between, especially around the outside so you can see what's inside from the outside, but don't forget the inside too.

Close the macaron with the second circle and decorate the top with some cream and raspberries.
