Préparation:
Knead the flour, butter, icing sugar, salt, vanilla, cocoa powder and egg yolk well.
Cover the dough and chill it in the fridge for at least half an hour.
Preheat the oven to 175 C top/bottom heat.
Roll out the dough on a floured work surface to a thickness of approx. 2 mm. Using a round biscuit cutter, cut out non-holed biscuit discs as the base, and biscuit discs with holes as the tops using a smaller cutter. Place the perforated and non-perforated biscuit discs each on a prepared baking tray and bake for approx. 10 - 12 min. under observation. Remove the biscuits from the tray and leave to cool briefly.
Spread the jam on the non-perforated biscuit slices, then place the perforated slices on top.
Melt the chocolate and butter. Transfer to a small bowl. Partially dip the biscuits, place on baking paper and leave to dry.
Serve or store in a biscuit tin in a cool, dry place.
