Préparation:
Put the milk into a pan and heat it.
Mix the eggyolks with the sugar and the vanilla in a bowl and pour the hot milk slowly over the egg mixture while continuing to mix. Pour it back into the pan and heat it gently while whisking continually until the mixture thickens. Take from the stove, add 130 g chocolate (chopped into pieces) into it to melt and let it cool.
Once it is cooled, gently stir the whipped cream into the mix. Pour the whole mixture into the icecream maker and let it do its work. After 30 minutes add the 20 g chopped chocolate.
Tip with the egg whites you can do wonderful fruit Sorbets that are delicious with the chocolate Ice-Cream.
Tipp in case you haven't got an ice cream maker:
1- Make the chocolate ice cream base.
2- When it is ready, pour it into an airtight container. Take a can larger than the volume to be frozen because the cream will increase in volume as it solidifies.
3- Place the can in the freezer and leave it for 1 hour.
4- Take it out and stir it. There are several ways to do this: by hand with a whisk, with an electric mixer (the best solution) or with a hand blender.
5- Stir the ice cream every hour for a few minutes. Repeat this step 4 to 6 times depending on the desired consistency, placing the ice cream back in the freezer between each stirring. The more the ice is worked, the finer the crystals and the more pleasant the texture of the ice cream. Make sure that your electric appliance is powerful enough to avoid overheating the motor.
Bon Appetit!
