Last year, a friend asked me a question: how could I feed a whole tableful of people for a week on a skiing holiday, without using a caterer, without booking a table at a restaurant every evening… and without being cooped up in the chalet’s kitchen whilst the others were sitting by the fire?
This menu is my answer. It’s not just a dinner, but a whole week’s worth of meals: dishes to cook at your leisure at home in the weeks leading up to the event, freeze, and then simply reheat when you get there.
Six generous portions, including two vegetarian options. I cooked, froze, defrosted and reheated them all to make sure they retained their flavour and texture.
Delicious home-cooked meals, without having to use a caterer or book a table at the resort restaurant every evening… and without spending your entire holiday budget there.
A week’s worth of meals to prepare in advance, including:
✓ No caterers, no restaurants: everything is homemade, at your own pace
✓ 6 slow-cooked dishes, ready to freeze
✓ As a bonus, my ‘ski soup’ for the day I arrive
✓ A seven-meal programme
✓ My method for vacuum-sealing, using the machine I use
✓ My tips for freezing, transporting and reheating
✓ Servings of side dishes for 4, 8 or 12 people
✓ Dishes tested after freezing
