White Zero Waste Asparagus Cream Soup (traditionnel and Thermomix)

Preparation:
Peel the asparagus, cut off the woody ends, sugar it lightly and put it in the saucepan. Pour in 1 l of water, bring to the boil and simmer gently for 10 minutes. Drain and collect the cooking juices, discard the asparagus peelings.
Cook the asparagus heads in the stock for 5 - 8 minutes, then remove with a ladle and set aside.
Cut the rest of the asparagus into pieces and simmer, covered, for about 18 minutes until the asparagus is cooked.
Melt the butter in a saucepan, sprinkle with flour and sweat for about 1 minute. Gradually add 750 ml of the asparagus stock, bring to the boil briefly.
Allow to thicken for 2 - 3 minutes, then add the asparagus without tips and simmer for 5 minutes. Add cream, white wine, salt, pepper and lemon juice and puree with a hand blender or stand mixer until smooth.
Serve decorated with asparagus tips and fresh chives.
