Peel the potatoes and cut them into cubes. Finely chop the onions, slice the peppers into strips, and cut the carrots into slices.
Heat the olive oil in a large pot and sauté the onions until translucent. Add the peppers and carrots, and sauté briefly.
Stir in the tomato paste, paprika powder, caraway seeds (if using), and marjoram. Season with salt and pepper.
Add the potato cubes and vegetable broth to the pot. Toss in the bay leaves and simmer on medium heat for about 25–30 minutes, or until the potatoes are tender.
Garnish with fresh parsley and adjust seasoning to taste before serving.
Tip: This goulash tastes even better the next day and can be enhanced with a dollop of sour cream or plant-based cream for a richer version.
