Turkey Caprese Panini with Olive Mayonnaise (traditional & Thermomix)

Preparation:
Ideally, make your own panini breads, I have linked the recipe above, but store bought works just as well.
Blend the lemon juice with the egg yolks in a tall, narrow container with a hand blender. Add the oil in a thin stream and blend to a mayonnaise. Chop the black olives and fold in.
Peel and finely dice the shallot. Wash the tomato and cut into thin slices. Wash the basil, shake dry, pluck off the leaves and chop finely. Put everything in a bowl, add oil and balsamic vinegar, mix and season with salt and pepper. Put it in a cool place.
Sort, wash and spin the rocket.
Cut the mozzarella into slices.
Salt and pepper the turkey escalopes, place on the hot panini grill and grill for approx. 4 minutes on both sides. Top with mozzarella slices and lightly melt with the Panini Grill without touching the cheese with the upper side of the panini press.
Cut the panini sandwiches in half, spread the underside with the olive mayonnaise and top with rocket. Spread the grilled turkey escalopes and marinated tomato slices on the rolls. Spread the top side with mayonnaise as well, place on top and grill in the panini press until the mozzarella has fully melted.
