Preparation:
Preheat the oven to 170 C.
In a bowl, cream the softened butter with the sugar until fluffy, then mix in the remaining ingredients to make a smooth dough.
Cover with a clean cloth or wrap in cling film and chill for 1 hour.
Dust the work surface with flour, roll out the dough to about 4 mm thick and cut out into biscuits with either a sock or boot cutter.
Line a baking tray with baking paper and bake the biscuits for 10-13 minutes until golden brown. Please check regularly as every oven is a little different.
Leave the biscuits to cool well as they are very tender.
Melt the chocolate and butter in a hot water bath.
Dip the tops of the cooled biscuits into the chocolate, wipe lightly around the edge of the bowl and then sprinkle with toasted hazelnut chips.
Let the biscuits dry and serve or store in an airtight tin for up to 6 weeks.
Tip: For a little bit of difference, cover a biscuit with homemade or store-bought chocolate/hazelnut spread, cover with a second biscuit, dip the top of the boot into the melted chocolate and sprinkle with toasted hazelnut chips.
