Summer Vegetable Parcels from the BBQ

Ingredients:
Preparation:
Finely grate the lemon rind. Mix the zest, butter, herbs and garlic into a food processor until blended, then season with salt and pepper. Wrap into clingfilm and reserve in the fridge.
Place the vegetables on 4 aluminium sheets. Divide the flavoured butter equally between the vegetables, dotting it on top. Fold up the sides of the foil. Cook over medium-hot BBQ for 25 - 30 minutes. Serve.
