Risotto Caprese (traditional & Thermomix)

A risotto in a mouth-watering tomato sauce, topped with chunks of mozzarella, fresh cherry tomatoes and roasted peppers.

Ingredients:
Preparation:
Heat the oil and 1 tbsp butter in a deep frying pan. Add the shallot and garlic and fry for about 2 minutes. Stir in the salt, pepper, oregano, dried basil and red pepper flakes. Add the tomato paste and mix well. Add the rice and cook for 1 minute.
Add one ladleful of stock at a time, stirring regularly, until the stock is almost completely absorbed, before adding the next ladleful. Cook over a medium heat for around 15 minutes, until the rice is almost al dente.
Add the tomatoes, cherry tomatoes and roasted peppers and simmer for a further 5 minutes until the risotto is ready. Add more stock if necessary.
Meanwhile, chop the basil and tear the mozzarella into small pieces.
When the risotto is ready, add the cream, Parmesan and butter. Add the basil and mozzarella. Adjust the seasoning. Cover and leave to rest for about 3 minutes before serving with a large salad.
