Ingredients:
Preparation:
Peel the garlic and crush it in a mortar together with the salt.
Pluck off the basil leaves, chop coarsely and add, then crush to a paste (or puree in a food processor).
Add the pine nuts (lightly toast them first if necessary) to the mixture and crush again, then stir in half the Parmesan.
Drizzle in a little oil - just enough to thicken the sauce and give it a creamy consistency.
Add most of the remaining cheese and season with salt and black pepper.
Taste the sauce and keep adding more cheese or oil until you are happy with the taste and consistency.
