Nettle Soup

Preparation:
For the nettle soup, cut the onion into small dice and sauté gently in olive oil.
Wash the nettle leaves and add them to the pan until they are reduced.
Peel the potatoes, cut them into small cubes and add them. Then pour in the liter of water and the stock cubes.
Cook until the potatoes are cooked and then mix the soup until it is homogeneous.
Personally I like to eat an egg in the soup.
