Ingredients:
Preparation:
**Prepare the Mashed Potatoes:**
Peel and cut the potatoes into chunks, then cook them in salted water for about 20 minutes. Drain the water, add the milk and butter. Mash with a potato masher or hand mixer. Season with salt and nutmeg.
**Make the Cream Spinach:**
Finely chop the shallot and garlic. Heat the butter and olive oil in a pan, then sauté the shallot and garlic. Add the flour and cook briefly. Stir in the cream and about 100 ml of water, mixing well. Add the spinach and let it simmer for 5 minutes. Season with salt, pepper, and nutmeg.
**Cook the Fish Sticks & Fried Eggs:**
Fry the fish sticks in a pan with a little oil until golden brown (or bake in the oven at 200°C for about 15 minutes). In a separate pan, fry the eggs in butter or oil to the desired doneness.
**Serve:**
Spoon the mashed potatoes onto plates, top with spinach, add the fish sticks, and finish with a fried egg.
Enjoy your meal!
