Ingredients:
Preparation:
Hard boil 4 eggs (my energy saving method can be found on the blog), rinse with cold water and peel.
Deseed the red pepper and cut into smallish chunks.
Leave the skin on ½ a cucumber but deseed it and cut into small pieces.
Quarter the cherry tomatoes.
Finely slice the spring onion.
Cut the iceberg salad into bite-sized pieces.
Place all the vegetables into a bowl.
Make the salad dressing, blending the vinegar, oil, the pressed garlic, creme fraiche, mustard, the chopped herbs and season to taste. Mix into the salad.
Quarter the hard boiled eggs, add to the salad and serve.
