A simple Mediterranean salad made from kidney beans with fresh garden vegetables, dill and a homemade Dijon vinaigrette.

Ingredients:
Preparation:
Mix the kidney beans with the chopped vegetables and dill.
To make the dressing, in a separate small bowl, emulsify the lime juice, oil, mustard, garlic, sumac, salt and pepper with a whisk.
Pour the dressing over the salad and mix well. Adjust the seasoning to taste.
Cover and leave to infuse in the fridge for at least half an hour to an hour before serving.
