Ingredients:
Preparation:
Place the apples, lemon juice, sugar, vanilla and the cinnamon (if using) in a large saucepan or casserole dish.
Cover and cook over a medium heat for about 10 minutes (adding a little water if necessary), stirring occasionally, until the apples are soft and starting to fall apart.
Once the apples are cooked, remove from the heat and puree the mixture with a hand blender until smooth. Alternatively, mash the apples with a fork for a chunkier consistency.
Store: Pour the apple sauce into sterilized jars and seal tightly.
For preserving: Place the sealed jars in a large pan of boiling water (the water should cover 2/3 of the jars) and simmer for 30 minutes. Leave the jars to cool and store in a cool place.
The applesauce can be kept for up to a year if properly sealed!
