French pork roast - country style

Ingredients:
Preparation:
Preheat the oven to 200 C upper/lower heat or 180 C fan heated oven.
Chop the shallots.
Season the roast pork with salt and pepper.
Heat the oil and butter in a casserole dish. Place the pork roast in the pan and sear it well on all sides.
Take the pork roast out of the pan and quickly fry the shallots with the bacon in the pan fat until they are golden but not brown. Put the pork roast back in the pan with the bacon and shallots and moisten with 50 ml of white wine and 80 ml of water.
Cover the casserole with the lid and cook for 2 hours.
When the cooking is finished, skim off the cooking liquid with the ladle, leaving the lardons and shallots in the casserole.
Put the liquid in a small saucepan and add 100 ml of white wine and 100 ml of water.
In a bowl, mix 30 ml of Cognac with 1 tablespoon of cornstarch.
Bring the liquid to the boil, pouring in the Cognac - cornstarch mix.
Stir well and leave to thicken over medium heat for a few minutes while you carve the pork roast. Add to the shallots and bacon, season well and serve immediately with the roast pork.
