Crostini with white bean cream (traditional & Thermomix)
Vegan but even a hit with meat lovers!

Preparation:

Preheat the oven to 200 C top/bottom heat.

Wash and clean the courgettes and grate roughly with a kitchen grater. Mix with a little lemon juice/peel and salt and leave to drain in a sieve.

Cut the ciabatta into slices, drizzle with 3 - 4 tbsp oil and toast in the preheated oven for 8 - 10 minutes until golden brown, turning once in between.

Meanwhile, finely chop the rosemary. Peel the garlic and shallots and finely dice both. Drain the beans in a sieve, rinse and drain well.

Heat 2 tbsp olive oil in a pan. Sauté the garlic and shallots in it. Add the beans, capers and rosemary and sauté for 4-5 minutes. Pour the mixture into a tall container. Add the remaining oil and puree everything with a hand blender. Season the cream with the remaining lemon zest, lemon juice, salt and pepper and leave to cool slightly. 

Drain the dried tomatoes and chop coarsely. Squeeze the courgettes well and mix with the tomatoes. 

Remove the toasted ciabatta slices from the oven and leave to cool briefly, then spread with the bean cream and top with the courgette mixture. Serve the crostini immediately.
