Crispy Burrata on Winter Oven-Roasted Tomatoes

Ingredients:

Preparation:

**1. Prepare the burrata:**
Gently pat the burrata dry to remove excess moisture. Coat it first in flour, then in the beaten egg, and finally in panko breadcrumbs. For an extra thick crust, repeat the process with the egg and panko.
Place the coated burrata in the freezer for 15–20 minutes to help it hold its shape.

**2. Prepare the tomato sauce:**
Sauté the onion in 1 tbsp olive oil over medium heat until translucent. Add the finely chopped garlic and cook briefly.
Transfer the cherry tomatoes with their juice to an ovenproof dish. Add brown sugar, paprika powder, chili powder, oregano, and olive oil. Season with salt and pepper, mix well, and roast in a fan oven at 180 °C.

**3. Cook the burrata:**
**In the oven (or air fryer):**
Once the burrata is well chilled, lightly spray it with olive oil and place it in a preheated fan oven at 180 °C. Position the burrata in the upper third of the oven and the tomato sauce in the lower third to ensure it receives direct heat.
Cook both simultaneously for 15–18 minutes. Check after 12 minutes to see if the burrata has turned golden brown.
**In the deep fryer:**
Fry the well-chilled burrata at 170 °C. It will develop a golden, crispy crust within 2 minutes. Drain on kitchen paper after frying.

**4. Assemble and serve:**
Spread the warm tomato sauce onto plates, place the crispy burrata on top, and garnish with freshly grated Parmesan and basil. Serve immediately and enjoy!
