For the garnish, cut the carrot, parsnip, red pepper and 100 g potatoes into small cubes (on my Nicer Dicer I use the smallest grid), cut the green part of the spring onion into thin rings.
Heat water with salt and cook the vegetables in it, keeping them slightly crunchy. Keep the cooking water and collect the vegetables to keep them warm.
For the soup, fry the chopped onion and the rest of the chopped spring onions in the melted butter until they become translucent. Add the rest of the potatoes and the cooking water, as well as the stock cubes, and cook with a closed lid.
Add the crème fraîche and spices, then blend the soup finely and adjust the seasoning.
Serve the soup with the vegetable garnish and sprinkle with herbs if desired.
