Cream cucumbers (traditional & Thermomix)

Ingredients:

Preparation:

Peel the onion and dice it. Peel the cucumber and take off the seeds (see tip). Cut the cucumber diagonally into pieces of 5 mm.

Chop the dill finely.

Heat the butter in a wide pot and fry the onions until golden, not brown. Add the cucumber and cook for another 2 minutes.
Add the vegetable stock and bring quickly to a boil.
Mix the sourcream with the lemon juice, mustard and cornflour and stir into the cucumbers bringing it to a quick boil.

Season with salt and pepper, add the chopped dill to the cucumbers and serve.

Tip: to take the seeds out of the cucumbers slice them lengthwise, take a teaspoon and take off the seeds. Otherwise the cucumbers will let too much water.
