Preparation:
Peel the shallots and chop into fine pieces. Mix the breadcrumbs, dill, basil, parsley leaves and chives with the butter and lemon juice to make a paste.
Cook the peeled and diced potatoes and carrots either in salted water or a steamer.
Preheat the oven. Place the fish in a buttered baking dish, spread the paste on top, pour in some hot stock and place in the oven. Bake at 160 C on the top shelf for about 10 - 12 minutes. After 5 minutes, check whether the stock has boiled away, then add a little more. Place under the grill if necessary.
For the sauce, bring 250 g cooking liquid (if cooked in the steamer) or water, flour, cream, pepper, stock cube and medium hot mustard to the boil, stirring constantly and whisking with a hand blender if necessary until frothy.
Serve immediately.
