Cod in Lemon sauce

Preparation:

Prepare the fillets with salt and pepper. Heat the oil in a pan and fry the fillets in it, 2 – 3 minutes per side, then put into another dish and keep warm.

Add the stock to the pan and let simmer for 5 minutes.

Add the lemon juice and bring to a quick boil. Place the cornstarch into a bowl, add a couple of spoons from the liquid in the pan to prepare a slurry. Pour it back into the pan and bring to a quick boil for it to thicken.

Take the pan off the stove, add the cream and the parsley.

Serve the fillets with the sauce.
