BBQ - Stuffed Tomato Parcels

Ingredients:
Preparation:
Preheat the BBQ. Heat the oil and add sunflower seeds and cook until golden.
Add onion and cook over low heat for 5 minutes or until softened.
Add the garlic and spinach, cover and cook for 2 - 3 minutes or until spinach has wilted. Remove the saucepan from the heat and season to taste with nutmeg, salt and pepper. Leave to cool.
Empty tomatoes, chop the flesh and stir it into the spinach mixture with the mozzarella cheese.
Fill the tomato shells with spinach and cheese mixture and replace the tops. Enclose tomato securely in aluminium foil.
Cook for 10 minutes, turning occasionally. Serve immediately in parcels.
