Ingredients:
Preparation:
Butter your mould and dust the inside with breadcrumbs so that the dough mix doesn’t stick once cooked.
Mix the softened butter, icing sugar, vanilla, Amaretto and salt together and add the egg yolks one by one, then add the melted chocolate and the walnuts.
Beat the egg whites until stiff. Mix the breadcrumbs and flour and lift very carefully under the dough mix together with the egg whites. Please, please do this very carefully and by hand as otherwise your mix will flatten and will not be soft and fluffy.
Fill the mix into the mould up to ¾.
Prepare a big pot with boiling water and place the mould into it. Close the lid and let it simmer gently for about 50 – 60 minutes.
Then lift it gently out of the water, let it stand for a couple of minutes and then take it out of the mould.
For the icing just pour the melted chocolate over the top.
Serve warm with lightly sweetened whipped cream.
Tip: This cake can be prepared in advance and frozen. When you want to serve it defrost and reheat gently. It is ideal as it takes pressure off the preparations on the day of your dinner party.
You can make this cake in individual portions or as one big cake to share.
Enjoy your meal!
