Austrian cut up pancakes - Kaiserschmarrn (Traditional & Thermomix)

Ingredients:

Preparation:

Mix together milk, flour, salt, lemon zest, vanilla and the egg yolks.

Beat the egg whites until stiff and add the sugar once the whites are half beaten. Add the egg whites delicately to the yolk mix by hand.

Melt the butter in a frying pan. Gently pour in the batter to a height of about 3 cm.

If you like, sprinkle a handful of sultanas on top and bake over a low heat. When the bottom side is lightly golden, divide the omelette in half and turn it over. 

Tear the 'omelette' with 2 spatulas into uneven pieces, about 3 cm in size. Sprinkle granulated sugar over the top and caramelise lightly in the pan.

Dust with icing sugar and serve on a plate with stewed plums or apple compote.

Tip for making the Kaiserschmarrn in the oven: Heat the butter in an ovenproof pan. Pour in the batter and sprinkle the sultanas on top.

Bake in the preheated oven at approx. 200 C top/bottom heat for 15, then divide into quarters. Turn and bake for another 10 minutes.

Divide into pieces, sprinkle with granulated sugar and leave to caramelise in the oven.
