Ingredients:
Preparation:
Rinse the rice under cold water until the water runs clear.
Add the rice and 150 ml water to a pot, cover, and bring to a boil.
Reduce the heat and cook on low for 10–12 minutes until the water is absorbed. Remove from the heat and let it rest for 10 minutes.
Bring a small pot of water to a boil. Add the edamame and cook for 2–3 minutes. Drain and set aside.
In a bowl, mix the soy sauce, sesame oil, rice vinegar, grated ginger, and honey until well combined.
**Assemble the Poke Bowl:**
1. Place the rice as the base in a bowl.
2. Arrange the scampi, carrots, cucumber, edamame, and avocado in separate sections.
3. Drizzle with the sauce.
4. Garnish with sesame seeds and spring onion. Add pieces of nori if desired.
### **Serving Tip**
Arrange the ingredients in colorful layers for a visually appealing and appetizing look. Pack the sauce separately if taking the bowl to the office to keep the vegetables fresh.
