Ingredients:
Preparation:
Finely chop the garlic and shallot.
Heat olive oil in a large pot. Sauté the garlic and shallot over medium heat for 2–3 minutes.
Add the celery, carrots, leek, peas, and zucchini. Sauté for 5 minutes over medium heat, stirring occasionally.
Pour in 1.2 liters of water, add the stock cubes, bay leaf, oregano, rosemary, salt, and pepper. Bring to a boil, then reduce the heat and simmer covered for about 20 minutes.
Add the alphabet pasta and cook according to the package instructions (around 4 minutes).
Adjust salt and pepper, then serve hot.
Tip:
You can prepare the soup without the pasta the day before and store it in the fridge. The next day, add the pasta and cook it directly in the soup before serving.
