  • ¾ English cucumber
  • Salt
  • 8 tranches thin slices of quality sandwich bread
  • Soft butter at room temperature
  • White pepper
  • A few fresh mint leaves
  • finely chopped

    TRADITIONAL METHOD
    Preparation (traditional method)
    1. Cut the cucumber into very thin slices. Place in a colander, sprinkle with salt and leave to drain for 20 minutes. If necessary, rinse with fresh water and dry on absorbent paper.
    2. Spread the slices of bread with the soft butter.
    3. Arrange the cucumber slices in an even layer on 4 slices of bread. Sprinkle with chopped fresh mint and season lightly with pepper.
    4. Cover with the remaining 4 slices, buttered side down.
    5. Carefully remove the crusts, then cut into fingers, triangles or small squares according to the desired presentation.
