Description

Today I'm not offering you a classic recipe, but a little gourmet tutorial: Austrian-style Gentlemen's Torte. This preparation, also known as Sandwich Cake, exists in many countries with local variations. In France, the Swedish version with cucumber, salmon and chives is particularly popular. The principle is simple: superimpose layers of bread, various fillings and seasonings, then cover the whole thing like a savoury cake. The result is a spectacular and convivial starter, perfect for a buffet, brunch or family celebration.

  • Bread de mie (round, square, rectangular, white, brown, brioche - with or without crust)
  • Butter
  • mayonnaise
  • mustard
  • chutney (to taste)
  • Ham
  • cheese
  • salami (or other charcuterie/vegetarian variants)
  • Salad leaves
  • Sliced tomatoes
  • Cucumbers
  • gherkins
  • Sliced hard-boiled eggs
  • Philadelphia + a little liquid cream for decoration (or plain fromage frais)

    TRADITIONAL METHOD
    Preparation (traditional method)
    1. Prepare the bread: Remove the crust from the chosen loaf.
    2. Assemble the layers: Spread the slices of bread (on both sides) with butter, mayonnaise, mustard or chutney. Then add the toppings: cold meats, cheese, salad, tomatoes, cucumber, gherkins or eggs, varying the layers.
    3. Shape the cake: Overlay the layers to form a "tower" of bread and filling. Leave to rest in the fridge for around 2 hours to allow the flavours to blend and the structure to hold together.
    4. Prepare the couverture: Mix the Philadelphia with a little liquid cream to soften it. Spread the outside of the cake with this mixture, like a glaze.
    5. Decorate: Garnish the top and sides with the ingredients used inside (for example: tomatoes, cucumber, ham, salad).
    6. Serving: Keep the sandwich cake in a cool place and serve the same day. The cream cheese filling should be made on the day of serving, as it dries quickly and can crack.
