Everyone in my circle knows that I love aperitifs – often to the point of replacing a starter with a wide selection of appetisers. I only discovered hummus when I arrived in England, as it wasn't known in Austria when I was growing up. It was a real revelation: an oriental dip made from chickpeas and tahini, simple but incredibly tasty. I first bought it at the supermarket, but soon started making it myself – it's so quick and easy, especially with a good blender (or a Thermomix). Today, I'm sharing the traditional version of hummus, a classic that you can customise to your liking.
